grapefruit and orange salad


ingredients:

3    oranges
1    grapefruit
1    medium red onion
1    lemon
2    tablespoons capers
1    tablespoon red wine vinegar
1/4 cup extra virgin olive oil
salt and freshly ground black pepper

Peel the oranges and grapefruit, separate into segments, then remove any white pith and pips. Cut the grapefruit and orange segments into bite-size pieces. Peel the onion, then slice into thin rings.

Put the orange and grapefruit pieces in a salad bowl with the onions.

Juice the lemon into a small bowl, add the red wine vinegar, olive oil and capers, whisk, and drizzle over the salad. Salt and pepper to taste.
Toss and serve.
