ingredients


1        pound new potatoes
1        medium red onion
1        teaspoon dried oregano
1        dozen ripe cherry tomatoes
1 / 4   cup capers
1 / 4   cup extra virgin olive oil
1 / 4   cup red wine vinegar
          
  salt and ground black pepper

method

Peel the potatoes and cut into bite-size pieces, then boil, drain and let
cool.

Peel and slice the onions into thin half-rings. Slice the cherry tomatoes in
half.

Prepare the dressing in a small bowl by mixing the olive oil, vinegar,
oregano, salt and pepper and then whisk.

Place the potatoes, sliced onions, tomatoes and capers in a salad bowl,
add the dressing, toss, and serve.
